कृषि विज्ञान केंद्र, सीतापुर की कृषि वैज्ञानिक डॉ रीमा सहजन के गुणों के बारे में बताती हैं, "अभी आप देख रहे हैं बहुत सारी ऐसी लाइफ स्टाइल डिजीज आ चुकी हैं, अगर हम महीने का डेढ़ से दो लाख रुपए भी कमा रहे हैं, उसका पचास प्रतिशत डॉक्टर के पास जा रहा है; इसलिए आज हम ऐसे पौधे की चर्चा करेंगे जो हमारे शरीर के लिए बहुत जरूरी है, जिन्हे हमारे पूर्वज लंबे समय से इस्तेमाल करते रहे हैं ऐसा ही एक पौधा सहजन है।"
वो आगे कहती हैं, "मोरिंगा तो दक्षिण भारत में अभी भी डेली डाइट में है, सांभर में बहुत इस्तेमाल किया जाता है, लेकिन अगर हम उत्तर भारत की बात करें तो अभी भी यहाँ पर सहजन का उतना ज्यादा उपयोग नहीं है जितना हमारे दक्षिण भारत के व्यंजन में होता है।"

Even if we earn one and a half to two lakh rupees a month, fifty percent of that is spent on doctors. Therefore, today we are discussing a plant that is crucial for our health and has been used by our ancestors for a long time—moringa."
She further explains, "Moringa is still a daily part of the diet in South India, especially in sambar, but its usage is not as widespread in North India. Moringa is highly beneficial for health and can also provide economic benefits with minimal effort."
Health and Economic Benefits:
By making a small effort, one can gain significant economic benefits from moringa. Solar dryers can be particularly helpful. The demand for moringa powder and moringa capsules is increasing because it is anti-diabetic. A diabetic patient can include 5-7 grams of moringa in their daily diet to avoid insulin. Moringa has anti-inflammatory properties that boost our immune system, reducing other illnesses. Moringa contains seven times more vitamin C than oranges.
The best part is that moringa can be grown in small spaces. Both its pods and leaves are useful.
Proper Method for Drying Moringa Leaves:
Moringa leaves can be dried using solar drying, sun drying, or shade drying. However, sun drying can introduce various impurities, making solar dryers a valuable tool. For home drying, a small solar drying setup costing around 9-10 thousand rupees can be made.
Solar drying preserves nutrients in a concentrated form. Choose a well-ventilated place for drying, with a panel to monitor the process. Lay the leaves in a thin layer for drying. If drying vegetables, wipe them with a cloth after washing to remove moisture.
Starting a Moringa Powder Business:
You can set up a solar dryer and sell moringa powder with the help of farmer producer companies or self-help groups. You can receive training through horticulture departments or NABARD. Numerous schemes are available to help start your business.
