- *Chickpea Flour (Besan)* - 2 tablespoons
- *Oil* - 2 tablespoons
- *Cumin Seeds* - 0.5 teaspoons
- *Mustard Seeds (Rye)* - 0.5 teaspoons
- *Onion* - 1 medium, chopped
- *Fresh Peas* - 1 bowl
- *Tomato Puree* - 2 tomatoes
- *Red Chili Powder* - 2 tablespoons (adjust to taste)
- *Garam Masala* - 0.5 teaspoons
- *Desi Ghee* - 1 tablespoon (for finishing)
### 🍽️ Detailed Method:
1. *Preparation of Flower*:
- Separate the cauliflower into florets instead of cutting them. Soak in water with salt and turmeric for 10-15 minutes to remove pests.
2. *Cooking the Flower*:
- Heat oil in a pan, add the chickpea flour-coated cauliflower, and sauté on medium flame until 70-80% cooked. Cover occasionally to ensure even cooking.
3. *Making the Masala*:
- In the same pan, add more oil, cumin, mustard seeds, and chopped onions. Sauté until golden brown.
- Add fresh peas and salt, mix well, and cover to cook until peas are soft.
4. *Preparing the Masala Paste*:
- In a bowl, mix red chili powder, turmeric, coriander, and garam masala with a little water to form a paste. Add this to the vegetable mixture.
5. *Final Cooking*:
- Add tomato puree and mix well. Cook on low flame until oil separates from the mixture.
- Add the cooked cauliflower and mix. Pour in hot water to adjust consistency and cover to simmer.
- Finish with a tablespoon of desi ghee for a rich flavor.
6. *Serving*:
