梭羅魚湯
材料:
梭羅魚1斤
節瓜3個
豆腐1磚
薑1舊
處理:
1. 豆腐,放在碗內,清水浸,放入雪櫃。
2. 梭羅魚,倒入大碗中,加入粗鹽1湯匙,用筷子攪勻,清水沖洗幾次,沖洗乾淨,擎乾水。
3. 節瓜,刨去皮,1開4, 切成三角形形狀,放碗中。
4. 薑,去皮,洗淨,1開2,拍鬆。
5. 豆腐,倒去水分,切一舊舊,放碗中。
烹調:
1. 大火在鑊中燒熱油2湯匙。
2. 放薑片及魚落鑊,不要攪爛魚,否則湯會是黑色的。
3. 另一邊鑊,大火煲滾水2升半。
4. 加入節瓜在魚中。
5. 加入豆腐在魚中,轉大火。
6. 水已煮滾,灒入魚中。
7. 大火滾起,冚蓋,轉中慢火,繼續滾。
8. 已滾了25分鐘,轉大火,繼續滾5分鐘。
9. 湯已滾好,熄火。
10. 夾起豆腐及節瓜,放碗中,倒湯入碗內。
11. 完成,可享用。
Ambassis gymnocephalus soup
Ingredients:
Ambassis gymnocephalus 1 catty
Fuzzy melon 3 Nos.
Tofu 1 cube
Ginger 1 No.
Preparation:
1. Tofu, is to be put in a bowl. Soak in tap water. Put in refrigerator.
2. Ambassus gymnocephalus, put in a big bowl. Season with cooking salt 1 tbsp, stir with a pair of chopsticks. Rinse with tap water several times. Rinse thoroughly. Hang dry.
3. Fuzzy melon, get it peeled. Divide it into 4 shares in triangular shape. Put in a bowl.
4. Ginger, get it peeled and rinsed. Divide it into 2 shares, beat well.
5. Tofu, pour away water. Cut into pieces, put in a bowl.
Steps:
1. Heat up oil 2 tbsp at high flame in wok.
2. Put ginger and fish in wok. Do not stir it too much. Otherwise the soup will turn in black colour.
3. In the other wok, heat up water 2.5L at high flame.
4. Put fuzzy melon in the fish.
5. Put tofu in the fish. Turn to high flame.
6. Water boils up. Pour direct in the fish.
7. Heat up at high flame. Cover up the wok. Turn to medium~low flame, continue boiling.
8. Soup has been boiled for 25 minutes, turn to high flame, continue to boil for 5 minutes.
9. Soup has been cooked well, turn off fire.
10. Pick up tofu and fuzzy melon, put in a bowl. Pour the soup in the bowl as well.
11. Complete. Serve.
