INGREDIENTS:
* Wheat Flour(गेहूं का आटा) - 3/4 Cup
* Fine Semolina(बारीक रवा) - 1/4 Cup
* Water(पानी) - 1/4 Cup
* Oil(तेल) - For Frying
For Filling
* Boiled Potato(उबले आलू) - 2
* Onion(प्याज़) - Some
* Green chili (हरी मिर्च) - Some
* Coriander leaves (धनिया पत्ती)
* Chat Masala(चाट मसाला) - Some
* Red chili powder(लाल मिर्च पाउडर) - Some
* Meethi Chutney(मीठी चटनी) - Some
For Pani Puri Masala
* Cumin(जीरा) - 3 Tbsp
* Cloves(लौंग) - 20
* Black Pepper(काली मिर्च) - 40
* Asafoetida(हींग) - 1/2 Spoon
* Dry Mango Powder(आमचूर पाउडर) - 2 Spoon
* Kashmiri Red chili powder(कश्मीरी लाल मिर्च पाउडर) - 1 Spoon
* Black Salt(काला नमक) - 1 Spoon
* Salt(नमक) - 1 Tbsp
For Green Pani
* Mint leaves (पुदीना पत्ती) - 1 Cup
* Coriander leaves (धनिया पत्ती) - 1/2 Cup
* Green chili (हरी मिर्च) - 4
* Ginger (अदरक) - 1 Inch
* Tamarind Pulp (इमली का पल्प) - 1/2 Cup
* Jaggary(गुड़) - 2-3 Spoon
* Water(पानी) - As required
* Pani Puri Masala(पानी पुरी मसाला) - 4 Spoon
* Raita bundi (रायता बूंदी)
✍🏻RECIPE:
For Golgappe, take a thali, put Karkara Atta, Papad Khar, and Semolina mix it well and bind the dough with Lukewarm Water then keep it inside for 2 hours for rest. Knead and mash the Atta Dough until smooth and soft. Then divide it into equal portions and roll it in a long shape and Round shape one by one. Fry them on high flame and after some time turn the flame medium to make them crispy.
For Filling, Boiled Potato, Onion, Green chili, Coriander leaves, Chat Masala, Kashmiri Red Chilli Powder, and Meethi Chutney in a big bowl &mix it well.
For Green Pani, In a mixing jar put, Mint leaves, Coriander Leaves, Green Chili, and Ginger grind it. take them out in a Big bowl then add Water, Tamarind Pulp, Jeggary, Pani Puri Masala, and some Boondi in it & mix it. Khatta Pani will get ready. Serve the tasty and healthy Pani Puri and enjoy it.
