**Ingredients:**
For the Stuffing Paste:
- Onion
- Garlic
- Green chillies
- Turmeric powder
- Coriander powder
- Roasted cumin powder
- Mango powder
- Asafoetida
- Fenugreek seeds powder
- Fennel seeds powder
- Kashmiri red chilly powder
- Salt
- Rock salt
For the Dish:
- Small brinjals (500g)
- Potatoes
- Mustard oil
- Water
- Rice and lentils for cooking
- Carrots and beetroots for salad
**Procedure:**
1. Peel potatoes and onions, and wash all the vegetables.
2. Make a paste using a chopper by combining chopped onion, garlic, and green chillies with water.
3. Add turmeric powder, coriander powder, roasted cumin powder, mango powder, asafoetida, fenugreek seeds powder, fennel seeds powder, Kashmiri red chilly powder, salt, and rock salt to the paste. Mix well.
4. Cut crisscross patterns on the brinjals, keeping the top green part intact. Stuff the brinjals with the prepared paste.
5. Cut potatoes into medium-sized pieces.
6. Heat mustard oil in a kadhai, add potatoes and the remaining stuffing paste. Roast lightly for 5 minutes.
7. Add the stuffed brinjals, mix well, and cook on low-medium flame with the lid closed for about 20 minutes. Stir occasionally.
8. While the dish is cooking, prepare rice and lentils in separate cookers.
9. Make a quick salad with carrots and beetroots.
10. Check on the brinjals and stir as needed.
11. For dessert, set Kunda using parchment paper in a bowl.
12. Prepare dal tadka by adding cumin seeds, green chillies, and fresh coriander leaves to hot oil.
13. Serve hot Bharwa Baigan, Bharwa Aloo, dal tadka, rice, salad, and chapatis.
14. Enjoy the delicious homemade thali!
