Dan Dan Noodles is one of the most famous of Sichuan street foods. The name is derived from the way it is sold – by a vendor carrying a shoulder pole and bawling. The freshly boiled smooth noodles are served in a savory, spicy sauce topped with crispy pork. The numbing and slightly sharp taste lingers just as its bright color and mouthwatering smell.
