材料
甜塔皮麵糰
低筋麵粉:250g
糖粉:25g
發酵奶油 125g
全蛋:1顆
檸檬塔餡
細砂糖:110g
檸檬皮:2T
玉米粉:12g
檸檬汁:110g
雞蛋:200g
無鹽奶油:150g
甜塔皮麵團作法:
1. 低筋麵粉,糖粉過篩後備用。
2. 冷藏的奶油80g切成一公分左右的小丁備用
3. 料理盆中放入低筋麵粉,糖粉,放入做法2的奶油用手搓成小顆粒狀
4. 全蛋一顆打勻後倒入做法3的粉類中,用按壓的方式拌至看不到粉類,冰入冰箱冷藏20分鐘。
5. 20分鐘後,將麵團擀開成0.2CM左右的厚度,用8吋派模壓出一個圓形,將面皮放入塔模中沿著塔模按壓成型。將多餘塔皮切除,盡量壓薄。剩下的派皮可以重整後可以再次壓模,但是不要出過三次以免出油。
6. 模型底層用叉子搓出氣孔。
7. 烤箱180度烤15分鐘後定型,將模型拿出,塔皮繼續再烤15分鐘取出。
檸檬塔餡作法
1. 檸檬刷出檸檬皮,加入砂糖中拌勻,讓砂糖吸收檸檬的香氣。
2. 200g的蛋汁打勻,加入砂糖,過篩的玉米粉攪拌均勻。
3. 將作法2的蛋汁倒入牛奶鍋中,開中小火,邊攪拌邊倒入檸檬汁,攪拌至稠狀,離火。
4. 稍微降溫後,將無鹽奶油加入攪拌均勻,用均質機稍微打過成光滑狀,過篩後冰入冷藏至完全冷卻。
組合
1.將內餡裝入擠花袋,使用玫瑰花專用花嘴(SN7082),擠出玫瑰形狀,表面可再撒上檸檬皮屑

Unsalted butter: 150g
How to make sweet tart dough:
1. Sift cake flour and powdered sugar and set aside.
2. Cut 80g of refrigerated butter into small cubes about 1 cm in size for later use
3. Put low-gluten flour and powdered sugar in a cooking bowl, add the butter from step 2 and rub it into small granules with your hands
4. Beat an egg and pour it into the flour from step 3. Press and mix until no flour is visible. Refrigerate for 20 minutes.
5. After 20 minutes, roll out the dough to a thickness of about 0.2 cm. Use an 8-inch pie mold to press out a circle. Place the dough into the pie mold and press along the mold to shape it. Cut off the excess pie crust and press it as thin as possible. The remaining pie crust can be re-molded, but do not mold it more than three times to avoid oil release.
6. Use a fork to create air holes on the bottom layer of the model.
7. Bake in the oven at 180 degrees for 15 minutes until it is shaped. Take out the mold and continue to bake the tart crust for another 15 minutes before taking it out.
Lemon tart filling recipe
1. Peel off the lemon peel and add it to the sugar, mix well and let the sugar absorb the lemon aroma.
2. Beat 200g of egg liquid, add sugar and sifted corn flour and mix well.
3. Pour the egg liquid from step 2 into the milk pot, turn on medium-low heat, pour in the lemon juice while stirring, stir until thick, and remove from heat.
4. After it cools down slightly, add the unsalted butter and mix well. Beat it with a homogenizer until it is smooth. After sifting, refrigerate until completely cooled.
Combination
1. Put the filling into a piping bag, use a rose-shaped nozzle (SN7082), squeeze out the rose shape, and sprinkle lemon zest on the surface
