Friends, today I'm celebrating Holi with a traditional Maharashtrian Thali, featuring authentic dishes like Chana Dal Puran Poli, Maharashtrian Amti, Potato Sabji, Pyaj Ke Pakode, and Varan Bhaat. A full authentic Maharashtrian Thali served with papad and mamri.
Chana Dal Puran Poli:
A classic Maharashtrian sweet treat, Puran Poli is made with a filling of boiled chana dal mixed with jaggery and spices, wrapped in a soft dough cover. It's a staple at special occasions and festivals.
Maharashtrian Amti:
This flavorful dal dish from Vidharbha is made with split toor dal, seasoned with goda masala, jaggery, and tamarind, offering a balanced taste of spicy, sweet, and tangy flavors.
Maharashtrian Potato Sabji (Batatyachi Bhaji):
A simple yet flavorful potato curry, boiled potatoes are sautéed with onions, garlic, and spices, making it a perfect accompaniment to rice or roti.
Pyaj Ke Pakode (Kanda Bhaji):
Crispy onion fritters made with besan and spices, these are a popular snack in Maharashtra, often enjoyed with tea or chutney.
Varan Bhaat:

1 cup Water, पानी
¾ cup Wheat Flour, गेहूं का आटा
⅛ cup All Purpose Flour, मैदा
⅛ tsp Turmeric, हल्दी
⅛ tsp Salt, नमक
1 tsp Oil, तेल
Water required to bind soft dough
PURAN
Boiled Chana Dal
⅓ cup Jaggery, गुड
Little Water, पानी
1 tsp Pure Ghee, शुध्ध घी
2 nos. crushed Cardamom, २ पीसी हुई इलाइची
Pure Ghee, शुध्ध घी
MAHARASHTRIAN AMTI
50 grams Dry Coconut, सुखा नारियल
An Onion, प्याज
2/3 Garlic Cloves, लहसुन
2/3 Green Chilies, हरी मिर्च
1 tsp Dry Coriander, सुखा धनिया
½ tsp Cumin, जीरा
Half inch Chopped Ginger, अदरक
Chopped Coriander Leaves, हरा धनिया
½ cup Water, पानी
2 tbsp Oil, तेल
Dry Spices, सूखे मसाले
Dry Red Chilli, Bay Leaf, Cloves, Cinnamon
सुखी लाल मिर्च, तेज पत्ता, लौंग, दालचीनी
½ tsp Cumin, जीरा
½ tsp Red Chilli, लाल मिर्च
⅛ tsp Turmeric, हल्दी
¼ tsp Coriander-Cumin, धनिया-जीरा
¼ tsp Garam Masala, गरम मसाला
½ tsp Salt, नमक
Half a Lemon, निम्बू
Chopped Coriander, हरा धनिया
MAHARASHTRIAN POTATO SABJI
2 Nos. Potatoes, आलू
Little Salt, नमक (While Boiling)
3 tsp Oil, तेल
½ tsp Cumin, जीरा
Chopped Onion, Green Chilli, Curry Leaves,
कटा हुआ प्याज, हरी मिर्च और कड़ी पत्ते
¼ tsp Turmeric, हल्दी
½ tsp Salt, नमक
¼ tsp Red Chilli, लाल मिर्च
½ tsp Coriander-Cumin, धनिया-जीरा
1.5 tsp Dry Coconut Powder, सुखा नारियल
½ tsp Lemon Juice, निम्बू
Chopped Coriander, हरा धनिया
PYAJ KE PAKODE
2 nos, Onions, प्याज
½ tsp Salt, नमक
Half a Lemon, निम्बू
½ tsp Red Chilli, लाल मिर्च
⅛ tsp Turmeric, हल्दी
¼ tsp Hing, हिंग
½ tsp Ajwain, अजवाइन
½ cup Besan, बेसन
1 tbsp Rice Flour, चावल का आटा
⅛ tsp Baking Soda, बेकिंग सोडा
Little Water if Required
1 tbsp Besan, बेसन
Chopped Coriander, हरा धनिया
VARAN BHAAT
½ cup Tuvar Dal, तुवर दाल (Soaked for an hour)
1 cup Water, पानी
⅛ tsp Turmeric, हल्दी
½ tsp Salt, नमक
1 tbsp Jaggery, गुड
⅛ tsp Hing, हिंग
½ tsp Pure Ghee, शुध्ध घी
Chopped Coriander, हरा धनिया
½ cup Rice, चावल (Soaked for an hour)
½ cup Water, पानी
¼ tsp Salt, नमक
