Tomato pickle
Ingredients:
1 kg tomatoes (roughly chopped)
Mustard oil
1 teaspoon cumin seeds
1 teaspoon rai
1 teaspoon saunf
1-2 teaspoon red chili powder
3 teaspoon salt
½ teaspoon turmeric powder
100 gm jaggery
½ teaspoon hing
Method:
In a pan add ¼ cup mustar oil once hot enough, add 1 teaspoon cumin seeds, 1 teaspoon rai, 1 teaspoon saunf, 1-2 teaspoon red chili powder and mix well then add roughly chopped 1 kg tomatoes followed by 3 teaspoon salt, ½ teaspoon turmeric powder, mix it well then close the lid and cook it until tomatoes are mushy then cook it without the lid until the water evaporates on low flame for 30 mins
Now add 100 gm jaggery and stir continuously, once all the water is dried off turn off the gas
For tadka add ¼ cup mustard oil and heat it, then add ½ teaspoon hing then add tadka into the pickle and mix it well
store tomato pickle in glass container
