Rajasthani Panchmel Dal (Panchratna Dal)

I have used Malaysian Palm Oil in this recipe. Moderate use of Palm oil can lead to several benefits. It has no Trans Fat and doesn’t affect cholesterol when used moderately. Due to high smoking point, Palm oil doesn’t release any harmful substance too while cooking.

Recipe -

Ingredients:
1/4 cup Chana Dal
1/4 cup Chilka Urad Dal
1/4 cup Chilka Moong Dal
1/4 cup Tuvar Dal
1/4 cup Masoor Dal
1/2 tsp Turmeric Powder
Salt as per taste
2-3 Bay Leaves
3 Cloves
1 Cinnamon Stick
2-3 spoon Malaysian Palm Oil
1 cup Water
1 tsp Cumin Seeds
Pinch of Asafoetida Powder
3-4 finely chopped Garlic Cloves
1 finely chopped small Ginger Knob
2 finely chopped Green Chillies
1 finely chopped medium sized Onion
5-6 finely chopped Tomatoes
2 tsp Red Chilli Powder
1.5 tsp Coriander-Cumin Powder
1 spoon Garam Masala
2 tbs plus more Kasuri Methi
Chopped Coriander
3 spoon oil

Method:
Soak all dals for 3-4 hours
Take it in a pressure cooker
Add 1/2 tsp Turmeric Powder
Add Salt as per taste
Add 2-3 Bay Leaves, 3 Cloves & 1 Cinnamon Stick
Add 1 spoon Oil
Add 1 cup Water and pressure cook up to 3 whistles
Further heat 1 spoon Oil in a pan
Add 1 tsp Cumin Seeds
Add a pinch of Asafoetida Powder
Add 3-4 finely chopped Garlic Cloves
Add 1 finely chopped small Ginger Knob
Add 2 finely chopped Green Chillies
Add 1 finely chopped medium sized Onion
Add Salt as per taste
Fry well until it's light golden-brown
Add 5-6 finely chopped Tomatoes and cook until it's dry
Further add 1 spoon Turmeric Powder
Add 1 tsp Red Chilli Powder
Add 1.5 tsp Coriander-Cumin Powder
Fry all masalas well
Add cooked dal and mix it well
Add Water if needed
Add 1 spoon Garam Masala
Add 2 tbs Kasuri Methi, mix it and turn off the heat
Dal is ready to serve (you can add tadka if you want)
Heat Oil in a pan
Add Kasuri Methi
Add 1 tsp Red Chilli Powder
Pour this tadka on Dal
Add some chopped Coriander
