哈囉~大家好,我是一個愛吃也愛料理的人! 這是一個跟大家分享料理的頻道~ 很感謝各位朋友來到我的頻道 ……^^…… ☆所有的食材份量.作法…… 都是我認為最合適,也是最喜歡的, 但並非絕對,每個人 喜歡的 都不相同~ 因此,可以參考我的作法之後, 自行斟酌調整哦!“^^” 每週將會‘’不定期‘’推出新影片; 希望大家可以多多支持(按讚.訂閱.分享)^^哦! ■ 材料配方 : □ 1份綠豆餡 : 綠豆仁 300 g ( 2個量米杯 ) 清水 510 g ( 3個量米杯 ) 植物油 ( 葵花油 ) 100 g 鹹味麥芽糖 60 g 白砂糖 120 g * 可以製做 40 g 內餡 18顆 或者 20 g 內餡 36顆; 今天我要做 40 g 的 9顆 ‘’大綠豆椪‘’, 以及 20 g 的 18顆 ‘’小綠豆椪‘’ □ 1份油酥皮 : ▪︎(水)油皮 :中筋麵粉 200 g 葵花油 50 g 清水 90 g 糖 15~30 g ▪︎油酥 : 中筋麵粉 100 g 葵花油 40 g * 1份油酥皮---> 可以製做 9顆大綠豆椪 ( 油皮一顆39g; 油酥一顆 15g ) 或者 18顆小綠豆椪 ( 油皮一顆18g; 油酥一顆 7g ) ; 因此,各位朋友 若要跟我製做 ‘’9大,18小‘’ 一樣的份量 就要準備 1份綠豆餡, 以及 ‘’2份‘’油酥皮哦! * 可以依照需求,斟酌調整製做的數量哦! ■ 材料準備 0:22(時間秒數) ●第一階段 0:23 ~ 6:45(時間秒數) ☆ 製做 綠豆餡料 ●第二階段 7:00 ~ 12:37(時間秒數) ☆ 製做(水)油皮. 油酥 ●第三階段 12:38 ~ 15:57(時間秒數) ☆ 包折 ( 油皮包油酥 ) 包折第一次 ~ 鬆弛 10分鐘 ( 光滑面向下 ) 包折第二次 ~ 再鬆弛 10 分鐘 ☆ 包餡 將酥皮麵糰( 光滑面向下 ), 四角向中心收口桿圓 包完餡鬆弛 10 分鐘 ●第四階段 15:59 ~ 17:32(時間秒數) ☆烘烤 • 預熱 : 170度 預熱 10 分鐘 • 開始烘烤 : 上下火 170度 烤 15分鐘 時間到之後,翻轉烤盤 170度 繼續再烤 10分鐘 * 實際烘烤溫度與時間, 請依照家中烤箱自行斟酌調整哦! ■成品展示 17:33(時間秒數) Vegan mung bean ~ Added liquid vegetable oil, no egg and milk; simple and unpretentious, crispy on the outside and sweet on the inside ■Material formula: □ 1 serving of mung bean filling: 300 g mung bean kernels (2 measuring cups) 510 g water (3 rice measuring cups) Vegetable oil (sunflower oil) 100 g Salted maltose 60 g White sugar 120 g * Can make 18 pieces of 40 g filling Or 20 g filling 36 pieces; Today I’m going to make 40 g of 9 pieces of ‘‘Big Mung Bean’’. and 20 g of 18 pieces of ''little mung bean'' □ 1 portion of puff pastry: ▪︎(water) oily skin: 200 g all-purpose flour Sunflower oil 50 g 90 g of water Sugar 15~30 g ▪︎Puff pastry: 100 g all-purpose flour Sunflower oil 40 g * 1 puff pastry --- Can make 9 large mung beans (One piece of fried dough is 39g; one piece of puff pastry is 15g) or 18 small mung beans (One piece of fried dough is 18g; one piece of puff pastry is 7g); Therefore, dear friends If you want to make the same serving size as I did "9 large, 18 small" Just prepare 1 portion of mung bean filling.
