हळद (Turmeric)
हळद या वनस्पतीचा वापर तिच्या औषधीय गुणधर्मामुळे भारतामध्ये फार पुरातन काळापासून भारतीयलोक स्वयंपाकात करतात. हळदीला आयुर्वेदामध्ये "हरिद्रा" म्हणतात. ओल्या हळकुंडापासुन भाजी तसेच लोणचे तयार करतात. हळदीचा वापर खाद्यपदार्थाला पिवळा रंग व चव आणण्या व्यतिरीक्त धामिर्क कार्यामध्येही करतात. हळदीमुळे शरीराची रोगप्रतिकारक क्षमता वाढते, रक्‍त शुद्ध होते, त्‍वचेचा रंग उजळतो, ही जंतुनाशक आहे. ही वनस्पती बारमाही आहे. हळद चुर्ण गरम पाण्याबरोबर घेतल्याने ह्रदविकार,मधुमेह,कर्करोग,मेंदुचे विकार होण्यापासुन प्रतिबंध होतो.पचनक्रिया सुधारते. त्याच प्रमाणे दुधामध्ये हळद टाकून घेतल्या नंतर रोगप्रतिकार शक्ती वाढते. जखम झाल्यास त्यावर हळद लावली असता रक्तस्त्राव बंद होतो. हळकुंड पासून हळद तयार होते. हळदीने अंग चोळल्याने अंगावरील मळ, मृत त्वचा निघून जाते व वर्ण उजळतो. हिंदू संस्कुतीत लग्नाच्या वेळी वर, वधूला हळद लावतात. हळद हे एक मसाले वर्गातील प्रमुख नगदी पीक म्हणून ओळखले जाते.

आले या वनस्पतीची लागवड पौराणिक काळापासून केली जाते. आल्यातील विशिष्ट चव व स्वाद यामुळे दररोजच्या जेवणातील मसाल्यात आल्याचे महत्वाचे स्थान आहे. ओले आले, प्रक्रिया करून टिकवलेले आले अथवा सुंठ अशा स्वरुपात आल्याचा उपयोग करतात. जमिनीतील आल्याच्या खोडाचा उपयोग मसाल्यासाठी करतात.
