Peel and chop the onions. 2. Slice the chestnuts. 3. In a sauté pan, melt the butter and sauté the onions for a few minutes. 4. Add the chestnuts, milk, and cream, and season with salt and pepper. 5. Cook over low heat for 20 minutes. 6. Blend the mixture until smooth. 7. Adjust the consistency by adding a bit more milk if needed. 8. Blend again with an immersion blender and serve piping hot. CHESTNUT CREAM - 400g cooked chestnuts (steamed or plain, from a can, jar, or thawed if frozen) - 260g granulated sugar or cane sugar - 220ml water 1. In a large, thick-bottomed saucepan, make a syrup by combining the sugar and water. Bring to a simmer until the sugar dissolves, then add the chestnuts. 2. Let cook for about 20-25 minutes, until the chestnuts are fully cooked and have absorbed the sugar (there should be little liquid left). 3. The mixture should thicken and become candied. Quickly blend to make it smooth. 4. Transfer to jars. FOR STERILIZING THE JARS Wash the jars thoroughly before pouring in the preparation. Place a new rubber seal, then close the jars tightly. Place all the jars in a cold oven, then sterilize at 150°C (300°F) for 1 hour. Allow them to cool completely in the oven with the door closed.
