Banana - ¾ of one
Rava (non roasted) -1 cup
Coconut - 2 handful
Cardamom powder - as needed
Sugar 1/2 cup
Salt - 2 pinches
Oil - to fry
Hi everyone, to make this delicious evening snack, first you need to caramelise some sugar in a pan on a medium to high heat.. you need to caramelise the sugar without adding any extra water to it.
Keep the flame high so that the sugar can melt and turn golden in colour.
Do not keep the flame to high and let it burn or turn into a brown colour.
Once the caramel has turned into a light golden colour, finely chop three by fourth of a banana and add it to the caramel and let it cook in the caramel until it’s soft and mushy.
Once the banana has cooked and blended well with the caramel, add some cardamom powder to taste and give it all a good mix.
After cooking this mixture for a few more seconds, add a cup of non roasted semolina into the mixture and mix well. To the same pan, add a cup of boiling hot water and mix well to evenly spread the water in the mixture.
Next, cook the mixture and all the water evaporates and the semolina is left cooked.
Once the batter is ready, it will reach the consistency where it starts to leave the pan.. when this consistency has reached, transfer it into another bowl or a plate and let it cool down a little.
After it has reached a temperature where you can touch it with your hands, add two handfuls of grated coconut and a pinch of salt and mix really well with your hands and prepare a smooth dough which doesn’t stick to the ball or your hand.
After you have prepared the dough, separate small balls from the dough and flatten it into a moderately thin round in your hand and deep fry in oil until golden brown on both the sides.
Once the snack turns golden on all the sides, take it out from the oil onto a serving plate..!!
Please note that either robusta banana or nendrapazham tastes the best for this recipe..
