Resep Roti Sisir. Roti sisir merupakan varian roti jadul yang disukai banyak orang. Ciri khas roti ini yaitu teksturnya yang lembut dan permukaannya dilapisi margarin dan gula sehingga warnanya mengkilap dan rasanya manis. Cocok untuk teman ngeteh ataupun ngopi.
Resep Roti Sisir (untuk 2 loyang ukuran 24x12cm)
Sponge / starter:
200 gr tepung terigu protein tinggi
150 gr air
5 gr ragi
55 gr gula pasir
Dough:
175 gr tepung terigu protein tinggi
30 gr susu bubuk
3 gr ragi
3 butir kuning telur
45 gr susu cair
45 gr mentega
5 gr garam
Pewarna kuning (opsional)
Olesan:
100 gr gula halus
100 gr margarin
Egg wash:
1 butir kuning telur
1 sdm air
Lainnya:
2 sdm mentega cair
Langkah:
1. Untuk sponge/starter, campurkan semua bahan hingga tercampur rata menggunakan sumpit kemudian simpan di dalam mangkuk dan ditutupi cling wrap selama 1-2 jam
2. Campurkan tepung, susu bubuk, dan ragi, aduk dengan tangan hingga tercampur rata
3. Masukkan susu cair dan kuning telur kemudian aduk hingga menyatu
4. Masukkan sponge/starter aduk dengan tangan hingga berbentuk adonan
5. Tambahkan mentega, garam, dan pewarna kuning lalu uleni adonan jika dirasa terlalu lengket bisa diolesi dengan minyak kemudian lanjut uleni hingga adonan benar-benar kalis (window pane)
6. Timbang menjadi 20 bagian masing-masing ±32-33 gr kemudian bulatkan adonan
7. Pipihkan adonan menggunakan rolling pin kemudian gulung dan rapatkan lalu susun diatas loyang (masing-masing loyang berisi 10 adonan) atau bisa juga adonan dipipihkan kemudian dilipat lalu susun di atas loyang kemudian diamkan 45-60 menit atau sampai mengembang dengan ditutup menggunakan lap bersih
8. Campurkan kuning telur dan air, olesi seluruh permukaan roti dengan bantuan kuas
9. Panggang dengan suhu 180° selama 20-25 menit
10. Keluarkan roti dari loyang lalu dinginkan diatas cooling rack dan olesi dengan mentega cair
11. Campurkan margarin dan gula halus hingga rata
12. Iris roti lalu olesi dengan olesan margarin dan gula halus, bisa juga diberi parutan keju
13. Roti sisir siap disajikan

100% Success! Soft, Fluffy Pull-Apart Bread Recipe [Sponge & Dough Method]
Pull-Apart Bread Recipe (for two 5 x 10 inch pans)
Sponge / starter:
200 g bread flour
150 g water
5 g yeast
55 g sugar
Dough:
175 g bread flour
30 g powdered milk
3 g yeast
3 pc egg yolk
45 g milk
45 g butter
5 g salt
Yellow food coloring (optional)
Spread:
100 g powdered sugar
100 g margarine
Egg wash:
1 pc egg yolk
1 tbsp water
Others:
2 tbsp melted butter
Steps:
1. For the sponge/starter, combine all the ingredients well with chopsticks. Rest in a bowl covered with plastic wrap for 1-2 hours.
2. Combine the flour, powdered milk, and yeast. Knead with hands until incorporated.
3. Add the milk and egg yolk. Knead until incorporated.
4. Add the sponge/starter. Knead with hands until a dough is formed.
5. Add the butter, salt, and yellow food coloring in. Knead. If the dough is too sticky, rub the hands and working surface with oil. Continue to knead until the dough becomes elastic (window pane stage).
6. Divide the dough into 20 pieces, ±32-33 g each. Round the dough to balls.
7. Flatten the dough with a rolling pin. Roll and seal the edges, then arrange the dough inside the baking pan (10 pieces in each pan). Or, flatten the dough and fold it in two and arrange inside the baking pan. Rest for 45-60 minutes or until the dough has risen. Cover with a clean cloth.
8. Mix the yolk and water. Brush the egg wash onto the dough’s surface.
9. Bake at 180°C for 20-25 minutes.
10. Remove the bread from the pan and let it cool on the cooling rack. Brush with melted butter.
11. Mix the margarine and powdered sugar evenly.
12. Slice the bread and spread the margarine and powdered sugar mix. You can also add grated cheese.
13. Pull-Apart Bread is ready to serve.
