Christmas Bread in the Bread Machine
3 extra large egg yolks or ¼ cup of yolk
1 cup lukewarm milk
‘1/2 tsp lemon juice
1 tsp vanilla
2 TBSPS soft butter
2 TBSPS sugar
3 cups of flour
1 ½ tsp salt
1 ½ tsps of fast rise yeast
1 ½ tsps. Lemon zest
¾ cup golden raisins
¾ cup mixed dried fruit
½ cup dried cranberries
To the pan of the bread machine add the egg yolks, water, lemon juice and butter. Then add the dry ingredients the flour, salt, sugar and lemon zest. Put the pan in the machine and set it on the dough setting. Set a timer for 10 minutes. Mix the fruit together with a TBSP of flour and when the timer goes off at the 10-minute mark add the fruit. Allow to complete the dough cycle. When you remove the dough from the pan gently bring it all together just to remove the additional air. You can divide the dough and put it in two separate loaf pans or do as I did using a smaller pan that is lined with parchment paper. Allow to rise for an hour and then put into a 375 degree oven for approximately 1 hour or until a thermometer reads between 190 and 200 degrees.
Cinnamon Raisin Bread
1 cup lukewarm water
2 TBSPS of sugar
2 ¼ tsps or 1 package of fast rise yeast
¼ cup oil
3 cups of flour
1 tsp of salt
1 tsp of cinnamon
Put the above ingredients in the bread machine on the dough setting. Set a timer for 10 minutes. At the ten minute mark add 1 cup of raisins that have had a tsp of flour added to them. Bake in a 375 degree oven for 35 minutes.
