🟢材料: 胡桃南瓜(牛油南瓜)1個 排骨 800克 豆豉 20克 蒜 1個 薑 1小塊 🟢調味料: 鹽 1/2茶匙 糖 1/2茶匙 生抽 1茶匙 老抽 1茶匙 蠔油 1茶匙 胡椒粉 適量 澱粉 1湯匙 油 適量 🟢做法: 1️⃣ 爆香薑末、蒜蓉、豆豉,關火下1/2茶匙糖拌勻備用。 2️⃣ 排骨洗淨晾乾水,下1/2茶匙鹽、1茶匙糖、1茶匙生抽、1茶匙老抽、1茶匙蠔油、少許胡椒粉、蒜蓉豆豉、1湯匙澱粉、少許油醃1小時備用。 3️⃣ 南瓜洗淨,留碗狀底部作原個蒸排骨,400克南瓜片作蒸排骨用。 4️⃣ 400克的南瓜片鋪碟底,500克醃過的排骨平鋪南瓜上,不要重疊,大火蒸12分鐘。如要南瓜很腍,可以先蒸南瓜5分鐘,倒出南瓜水,平鋪排骨大火蒸10分鐘。 5️⃣ 300克排骨放入南瓜蛊,大火蒸45分鐘。 🟢Ingredients: Butternut squash - 1 Pork ribs - 800g Fermented black beans - 20g Garlic - 1 clove Ginger - 1 small piece 🟢Seasoning: Salt - 1/2 teaspoon Sugar - 1/2 teaspoon Light soy sauce - 1 teaspoon Dark soy sauce - 1 teaspoon Oyster sauce - 1 teaspoon White pepper powder - to taste Cornstarch - 1 tablespoon Oil - as needed 🟢Cooking Directions: 1️⃣ Heat oil in a wok and sauté garlic, ginger, and fermented black beans until fragrant. Add 1/2 tsp sugar, mix well, and set aside. 2️⃣ Wash and dry the pork ribs. Marinate with 1/2 tsp salt, 1 tsp sugar, 1 tsp light soy sauce, 1 tsp dark soy sauce, 1 tsp oyster sauce, a dash of white pepper powder, the sautéed garlic, ginger, and fermented black beans, 1 tbsp cornstarch, and a little oil for 1 hour. 3️⃣ Wash the butternut squash and cut off the top. Hollow out the seeds and reserve the bottom part to be used as a steaming dish. Cut 400g of butternut squash into slices and set aside. 4️⃣ Arrange the 400g of butternut squash slices on the bottom of a steaming plate. Place 500g marinated pork ribs on top of the butternut squash, making sure not to overlap. Steam over high heat for 12 minutes. If you want a softer texture for the butternut squash, steam it for 5 minutes before adding the pork ribs.
