Recipe:
4 Egg Yolks
4 Egg Whites
1/4 tsp Cream of Tartar
1 1/4 Cup Heavy Whipping Cream
1/2 Cup Swerve Powdered Sugar
2 tsp Peppermint Extract (or any flavor)
2+ TBSP Sugar Free Chocolate Chips
Food coloring if desired
1. Separate egg whites from egg yolks in separate bowls. Set Aside.
2. Add Cream and Swerve into a third bowl and set aside.
3. With electric mixer add the cream of tartar into the egg whites and whip till stiff peaks, set aside.
4. Whip the cream and swerve mixture untill stiff peaks and set aside. (Add coloring if desired at this step.)
5. In the egg yolk bowl add the flavored extract and mix well.
6. Combine the cream mixture, egg white mixture and egg yolk mixture into one bowl and fold together until completely combined and can no longer see the egg yolk streaks.
7. Add 1/2 into your bowl or cup, mix in the chocolate chips, add some more ice cream and top with more chocolate chips. Freeze till solid.
8. When serving you will need to let sit on counter for approx. 10 minutes until scoopable. Enjoy!!!
