Arancini Balls
Preparation Time: 15 minutes
Cooking Time: 15 minutes
Serves: 3-4
Ingredients:
24 rice balls
For the Arancini Rice Balls:
2 cups leftover khichdi
¼ cup finely chopped coriander
¼ cup shredded processed cheese
1 cup mozzarella cheese
1 tsp pizza seasoning
1 tsp garlic powder
1 tsp onion powder
1 tsp yellow mustard powder
For Breading/ Frying:
1 cup flour
1 cups bread crumbs
1 tsp pizza seasoning
Oil for frying
Method:
Stir in finely chopped coriander, processed cheese, pizza seasoning into the khichdi. Form rice balls with wet hands.
Stuff each rice ball with a tsp of mozzarella cheese and form a tight ball with the rice mixture to enclose the cheese.
Set up 3 shallow bowls, the first one to have ¾ cup flour, the second with a slurry of ¼ cup flour and ½ cup water, the third with 1 1/2 cups bread crumbs.
Dredge each rice ball in flour, shaking off the excess, then dip one-by-one in slurry. Finally, roll balls in breadcrumbs until evenly coated. It’s best to roll and bread all of the rice balls before beginning frying since the frying is quick.
Add 2” vegetable oil into a deep pot over medium heat. Once oil is hot, add the breaded rice balls in batches without crowding the pot and cook about 4 min total per batch, turning to get all sides golden brown. Transfer to paper towels, and serve warm with sauce.
Dal Puri
Preparation Time: 15 minutes
Cooking Time: 15 minutes
Serves: 3-4
Ingredients:
1 cup leftover dal
2 cup atta
¼ tsp Ajwain
1 tbsp Kasuri methi
1 tsp red chili flakes
Salt
Method:
Knead together all the ingredients to make a smooth dough.
Break into equal sized balls, roll out into puris and fry in medium hot oil till crisp. Serve hot.
Roti Halwa
Preparation Time: 15 minutes
Cooking Time: 15 minutes
Serves: 3-4
Ingredients:
4-5 leftover roti
2 tbsp ghee
½ cup sugar
Dry Fruits of choice
¼ cup Grated dry coconut
Method:
Grind the rotis in a mixer to make a coarse powder.
Heat the ghee in the pan. Add the roti powder and sauté till lightly golden and fragrant.
Add 2 cups water and cook till the halwa leaves the sides of the pan.
Add the sugar and mix well. Cook for 3-4 minutes.
Add the dry fruits and serve.
