Shelia Peters - Thank you for asking me to make gnocchi with real potatoes! I hope you enjoyed!
Homemade Gnocchi: (makes 4 servings)
2 peeled cooked & mashed potatoes about 1 & 1/2 c)
2 cs flour (& about 1/4 additional c of flour to dust surfaces & help make the shape)
1/2 t salt
After cooking & mashing the potatoes, add the salt & flour & mix. Combine well (if needed, add a T of water but make sure the flour & potato are as combined as possible before determining if water is needed). Take small 1 inch balls of dough & roll into a ball, then dip the balls lightly in the addition flour & roll along the tines of a fork if design is desired. Lay out separated on a cookie sheet so they don't stick together until ready to use.
Easy Chicken Gnocchi Skillet:
2 T margarine
1/4 c chopped onion
1/4 c chopped chicken
1 pinch salt
1 pinch pepper
1 & 1/2 c prepared Gnocchi
1/4 c spinach
1/4 c cubed carrots
1 crushed bullion cube
1/4 c water
Melt margarine in skillet, add onions & sauté until translucent. Add chopped chicken & flip once lightly browned on one side. Add salt & pepper. Add Gnocchi & cook while stirring for 2 mins. Add spinach & cubed carrots & mix. After 1 min, add bullion cube & water & mix. Cook until carrots & Gnocchi are tender (about 3 mins).
Chicken Packets & Baked Potatoes: (serves 2)
4 chicken tenders
1/2 c spinach
2 T chopped onions
1 medium carrots cut in sticks
2 t flour
Pinch of salt & pepper
Pinch of thyme
2 t margarine
Baked Potatoes:
2 medium potatoes
1 T margarine
Pinch of salt and pepper
Preheat the oven to 350F.Take 2 pieces of tin foil & coat the surfaces with a t of margarine to avoid sticking. To each packet, add spinach, chopped onion, chicken tenders, & carrots (half in each packet). Sprinkle 1 t flour on top of each packet, then sprinkle with salt, pepper, thyme, & small pats of margarine. Close each packet, leaving some parts open to vent & place on a baking sheet. Stab each potato several times with a fork, then coat each with margarine & sprinkle with salt. Place on the same baking sheet. Bake at 350F for 30 min (or until chicken is 165F internally. Take the packets off & bake potatoes about 15 mins more or until fork tender. Open & plate each chicken packet, then add the baked potato (add salt, pepper, & margarine if desired).
Chicken Tender Sandwhich & Carrot Coins:
Buns:
1/2 c warm water
1 T Shredded carrot (or sugar)
2 T yeast
1/2 t salt
1 T margarine
1 & 1/2 c flour
Pinch of garlic powder, Oregano, salt, & 2 t melted margarine for tops if desired
In a bowl, combine water, shredded carrots, & yeast. Allow to grow for 10 mins (should foam on top). Add salt, margarine, & flour & knead until smooth (about 10 mins). Allow to rise until doubled in size (about 45 mins). On a parchment lined baking sheet, make 4 breadstick shapes using about 1/4 c dough for each & set on sheet. Roll & flatten remaining dough into 2 rounded flat "bun" shapes. Allow to rise for another 30 mins & preheat oven to 350F. Bake at 350F for 25 mins or until light brown. For darker buns, brush tops with melted margarine, garlic powder, salt, & Oregano the place back in oven for 1 min on broil & watch until they turn golden brown & remove.
Chicken Tender Sandwhich:
2 buns sliced
1/2 c flour
2 t seasoned salt
2 thick slices of red onion
3 T oil
3 chicken tenders (1 will be used in next recipe)
1/2 c spinach
Pinch seasoned salt
In a bowl, combine flour & 2 t seasoned salt. Heat a pan with oil over medium heat, then coat each chicken Tender in flour mixture & pan fry until golden brown on both sides & cooked to 165F internally. Remove from pan & place on a paper towel. Coat onion rings in flour mixture & pan fry until cooked through & browned on both sides. Remove & wipe pan. Heat spinach, add pinch of seasoned salt. Place bed of spinach on each bun, 1 sliced up tender, & top with onions & top of each bun.
Carrots "Coins":
3/4 sliced Carrot
1 T margarine
Pinch of salt & pepper
Pinch of Oregano
Over medium heat, melt margarine. Once pan is hot, add carrots & sauté until browned on each side. Then add salt, pepper, & Oregano.
Chicken Gnocchi Soup (& Garlic Breadsticks):
1 chopped & cooked chicken Tender
2 T margarine
1/3 c chopped onion
2 T flour
3 cs water
2 bullion cubes (crushed)
1 & 1/2 c Gnocchi
1/4 c shredded carrot
1/4 c spinach
Salt & pepper to taste
Pinch of garlic powder
Melt margarine in pot & add onion. Add flour & stir, then add water, bullion cubes, & Gnocchi. Stir. Add chicken, carrots, & spinach. Stir & cook until Gnocchi rises to the surface. Add salt, pepper, & garlic powder to taste.
