We have received questions about how we adopted slow living into our lifestyle and how it all started, so today we tell you a little about the journey we have made.
How our life changed when we were affected by chronic diseases and how we have learned to make the best of our life situation.
We go for a walk in our beautiful surroundings here on the Swedish west coast where we often find energy and strength and we cook a lunch with left-overs and vegetables we bought in a nearby farm shop.
I also show a slightly different tulip creation in a vase and what you can do with a decorative wallpaper scrap.
OVEN OMELETTE
2-3 tbsp olive oil
about 10 cherry tomatoes
1 small onion
mixed vegetables (leftovers)
6 eggs
4 dl milk
2 dl grated cheese
salt and pepper
extra ham or salmon or bacon etc
Heat the oven to 200 degrees
Pour the olive oil into a baking dish
Halve the tomatoes and chop the onion
Put onion together with other vegetables in the baking dish
Place the vegetables in the oven for 10-15 minutes
Whisk eggs and milk together in a bowl
Add the grated cheese and stir
Salt and pepper
Take out the baking dish
Place meat or fish if you have it over the vegetables
Pour over the egg and cheese mixture
Bake in the oven for about 25-30 minutes until the omelette is colored.
Serve the omelet as is or together with a salad
