Ingredients:
• 1 cup coarsely pulsed steel cut oats
• 1/2 cup nut butter (peanut, almond, or cashew)
• 1/3 cup honey or maple syrup
• 1/2 cup dried cherries, chopped
• 1/4 cup chopped almonds or other nuts (optional)
• 1/2 tsp vanilla extract
• Pinch of salt
• Optional: 1 Tbsp chia seeds, ground flaxseed, or shredded coconut

Instructions:
1. Mix wet ingredients:
In a small saucepan over low heat (or microwave in 20-second bursts), gently warm the nut butter and honey/maple syrup until smooth and pourable. Stir in vanilla and salt.
2. Combine:
In a mixing bowl, stir together the pulsed oats, dried cherries, nuts, and any optional add-ins. Pour the warm nut butter mixture over the dry ingredients and mix well.
3. Press and chill:
Line a small pan (like 8x8 or a loaf pan for thicker bars) with parchment paper. Press the mixture in firmly and evenly.
4. Set:
Refrigerate for at least 1–2 hours or until firm. Slice into bars. Store in the fridge for up to 1 week or freeze for longer.
