CINNAMON APPLE BANANA PANCAKES
• 1 ripe banana (mashed)
• 2 egg
• 1 cup kefir
• 1/2 cup all-purpose flour
• 1/2 cup almond flour
• 2 tbsp coconut flour
• 1 tsp baking powder
• 1/2 tsp baking soda
• 1/4 tsp cinnamon (optional)
• Pinch of salt
• 1 tsp vanilla extract
• 1-2 tbsp sugar or honey (optional)
• Butter or oil for cooking
SLOW COOKED BEEF AND VEGGIE STEW
• 1.5 lbs (700g) beef
• 2 tbsp avocado oil
• 1 large onion, diced
• 4 cloves garlic, minced
• 3 carrots, peeled and cut into thick rounds
• 2-3 potatoes, peeled and cut into chunks
• 2 celery stalks, sliced
• 1 cup mushrooms, sliced
• 1 can (14.5 oz) diced tomatoes
• 4 cups beef broth
• 2-4 bay leaves
• 1 tsp thyme
• 1 tsp rosemary
• Salt and pepper, to taste
• Fresh parsley for garnish
