Notes
I probably wouldn't buy the beef slices again. I would substitute the money for more potatoes or vegetables. You could still make the dish with the beef gravy though, because it was delicious. I ran out of time and didn't end up using much of the evaporated milk, but I had planned to make a curried potato and kale soup with it.
⭐️ RECIPES
KENTUCKY BISCUITS - from ALLRECIPES
2 cups all-purpose flour
2 ½ teaspoons baking powder
½ teaspoon baking soda
1 dash salt ( 1/8 tsp salt)
1 tablespoon white sugar
½ cup butter
¾ cup water (original recipe calls for buttermilk)
1/2 tsp white vinegar
Put dry ingredients in bowl and mix together. Grate in frozen stick of butter, add in water with vinegar already mixed in. Combine. Roll out on floured surface. Be careful to not overwork your biscuits. Makes 12. I suggest making at least 2 batches of 12 biscuits and one of 8 biscuits. Make the 8 biscuits larger in size. This works for some of the meals. Bake at 400 for 15-20 minutes or until done.
⭐️ SMOKED PAPRIKA SALAD DRESSING - I cut this in half
½ cup red wine vinegar
⅓ cup honey
*optional -1 tablespoon stone-ground mustard - I used Dijon
¾ teaspoon ground black pepper
¾ teaspoon salt
1 ¼ teaspoons smoked paprika
dash garlic powder
dash onion powder
1 teaspoon white sugar
½ cup olive oil
mix together ingredients
MENU IDEAS to FEED 4 - ADJUST THIS TO SUIT YOUR FAMILY!
fried potatoes with spam and a fried egg on top biscuits on side - 4 EGGS
egg biscuit with hashbrowns with onions small side kale (1 stalk) -4 EGGS
open faced chipped beef sandwiches with gravy on biscuits with mashed potatoes and small side kale (1 stalk) = 1 EGG for egg wash
eggs and spam with large biscuit 4 EGGS
biscuits with milk gravy and scrambled eggs 5 EGGS
spaghetti with marinara or frittata with kale and tomato sauce drizzled over the top served with corn on the cob and kale salad =5- 6 EGGS
