Merry Christmas!
I made my own version of the classic Christmas cake.
The cake is made with a moist, glutinous, gateau chocolate-like batter and a mature, bitter cream with a hint of kirsch. It is accented with the sourness of different berries.
I heard that it is technically called Bûche de Noël. Bish = stump, Noel = Christmas.
It's rather easy to make and looks great, so give it a try.
Ingredients (for 1 or 2 people)
Dough
60g flour
3 eggs
10g cocoa powder
60g sugar (white sugar or granulated sugar)
30ml salad oil
40ml water
Cream
200ml fresh cream
60g chocolate (65% cocoa or higher recommended)
Kirsch (or rum or brandy)
Garnish
Strawberries
Mixed berries (if using frozen berries, eat them quickly or spread napage on them as they will drip water)
