SILVIA CAKE RECIPE
INGREDIENTS (16 pieces):
Cake:
3 eggs
3 dl sugar
1½ dl cold water
3 dl all-purpose flour
1 tbsp baking powder
Glaze:
250 g butter
2 dl sugar
1 tbsp vanilla powder
3 egg yolks
1 dl shredded coconut
INSTRUCTIONS:
- Preheat the oven to 175°C (350°F).
- Line a 20x30 cm (8x12 inch) ovenproof dish or baking tray with parchment paper.
- In a bowl, whisk eggs and sugar until light and fluffy. Stir in the water.
- Mix flour and baking powder, then sift into the batter. Stir until smooth and pour into the baking dish.
- Bake on the lowest rack for about 30 minutes, or until a toothpick comes out dry. Let cool.
Glaze:
- Melt butter and sugar in a saucepan. Bring to a boil and simmer for 1 minute, stirring constantly.
- Remove from heat and add egg yolks and vanilla powder. Return to low heat and whisk vigorously until the glaze thickens. Do not let it boil. Let cool slightly.
- Pour the glaze over the cake, sprinkle with shredded coconut, and let cool completely before cutting.
