Pour some of the sugar into a bowl. We will add it gradually. Use a bowl with a thick bottom, so the sugar does not burn. Set it to maximum heat until you see how the sugar begins to melt. Prepare 40 grams of butter. Begin gradually adding the remaining sugar on top of the melted one. You can stir and reduce the heat to 50 or 30% of the maximum power. As the sugar begins to melt more and more, add new. At the same time, heat the cream over low heat. Do not heat it to a boil! It is important that the cream is already warm, as it will have to be poured into the sugar very quickly. Flatten the stuck together sugar pieces. Check the cream. There is steam, so remove the cream from the heat. Stir the sugar. There are less and less sugar granules in the mixture. Add the butter and stir quickly. Add all the hot cream and stir. Turn the heat to 15% and simmer the mixture, stirring constantly for about 5 minutes. Add some regular salt. We will add more coarse salt when the mixture cools. Fill the sink with cold water. Put the pan in it and stir the mixture until it cools. Add salt to taste. As much as you like. Pour it into a jar. *I usually keep it in the refrigerator. But if I am making brownies, I put the caramel in the freezer. This will make it harder and it will be easier to distribute it inside the brownie. Ingredients for brownie: -100 g butter -300 g chocolate -2 eggs -50 g flour -salt to taste Place butter and chocolate in a smaller saucepan. Prepare a second larger container to put the first one in. You will need to fill the larger one with water and melt the ingredients in a water bath. Cut the chocolate into pieces to add later to the finished baking mixture (it is better to sprinkle the pieces with salted caramel or add to the finished chocolate mass) Melt until completely dissolved, stirring occasionally so that the mixture is uniform. Transfer to a different bowl. Let it cool! This is important because we will need to add eggs later. Set the oven to 200 C or 400 F. Add eggs and stir. Add flour and salt to taste and stir. Pour half of the chocolate mixture into the pan. Now add the salted caramel as a second layer and add the chopped chocolate pieces on top of the salted caramel. Cover with the remaining chocolate mixture. Bake for 20 minutes. *Let the brownie cool completely, then put it in the refrigerator overnight. Once the brownie has set, it can be cut and served.
