Chicken Gnocchi Soup Recipe:
4 TB butter
2 TB olive oil
1c. Chopped celery
1 diced onion
1 c. matchstix carrots
1 TB minced garlic
1 tsp. Salt
1/2 tsp. pepper
2 tsp. onion powder
1 TB italian seasoning
1/4 c. flour
3 c. Chicken broth
3 c. milk
1 1/2 c. heavy cream
2 c. Cooked shredded chicken
8 oz. chopped frozen spinach
16 oz. Gnocchi
In a large pot over medium heat melt butter and olive oil. Add in vegtables and cook for around 7 min.
Add in garlic, stir. add in seasonings and stir. Add in flour and cook for a few more minutes.
Add in chicken broth, milk, and heavy cream.
Add spinach and shredded chicken. Bring soup to a boil. Add in gnocchi and boil for 2 minutes. You don't want to over cook the gnocchi. Turn off heat. Allow to cool down a bit before eating
