Here's a simple recipe for Potato Egg Biryilla Biryani: # Ingredients - 2 cups basmati rice - 2 large potatoes, peeled and diced - 2 large eggs, hard-boiled and diced - 1 large onion, finely chopped - 2 cloves garlic, minced - 1 teaspoon grated ginger - 1 teaspoon cumin seeds - 1 teaspoon coriander powder - 1 teaspoon turmeric powder - 1 teaspoon red chili powder - Salt, to taste - 2 tablespoons ghee or oil - 2 tablespoons chopped fresh cilantro (optional) # Instructions 1. *Prepare the rice*: Rinse the rice and soak it in water for 30 minutes. Drain and set aside. 2. *Cook the rice*: In a large pot, bring 4 cups of water to a boil. Add 1 teaspoon of salt and 1 tablespoon of ghee or oil. Add the soaked rice and cook until 70% done. Drain and set aside. 3. *Prepare the potato and egg mixture*: Heat 1 tablespoon of ghee or oil in a pan. Add the cumin seeds and let them sizzle. Add the chopped onion and sauté until translucent. Add the minced garlic and grated ginger and sauté for another minute. Add the diced potatoes and cook until they are 70% done. Add the diced eggs and cook for another 2-3 minutes. 4. *Assemble the biryani*: In a large, heavy-bottomed pot or Dutch oven, create a layer of cooked rice. Add a layer of the potato and egg mixture on top of the rice. Sprinkle some chopped cilantro, if using. Repeat this process until all the ingredients are used up, ending with a layer of rice on top. 5. *Dum cooking*: Cover the pot with a tight-fitting lid and cook over low heat for 10-15 minutes. This will allow the flavors to meld together and the rice to cook completely. 6. *Serve*: Turn off the heat and let the biryani rest for 5 minutes. Fluff the rice gently and serve hot. # Tips - Use aged basmati rice for the best flavor and texture. - Adjust the amount of chili powder to suit your desired level of spiciness. - You can add other spices, such as cinnamon, cardamom, or cloves, to the potato and egg mixture for added flavor. - For a more authentic flavor, use ghee instead of oil.
