Ingredients
For the dough;
150 gr room temperature margarine or butter
1 tea glass of oil
1 egg yolk (to be used for the white top)
1 tea glass of yogurt
1 packet of vanilla
1 packet of baking powder
3.5 cups of flour (you should add the rest after 3 in a controlled manner)
Your dough should be soft. If your dough is hard, you won't get the crispy result you want. ☺️

For the filling;
2 apples
4 dried apricots
4 dried figs
1 tablespoon raisins
A little more than half a glass of sugar
Half a tea glass of walnut filling
(You can also make the filling with just apples if you wish)

For the top;
1 egg white
1 bowl of walnut filling
A bowl of molasses
Preparation
Apples are peeled, grated and placed in a pan. Cinnamon and sugar are added and cooked until the water is absorbed. After cooking, finely chopped apricots, figs and grapes are added and mixed.
Dough ingredients are put in a kneading bowl. Flour is added slowly and a soft dough is obtained. If it is too hard, our cookies will be hard. We obtain more delicious and crispy cookies from soft dough. Egg-sized balls are taken from the dough. The middle of our balls is slightly hollowed out, a teaspoon of apple filling is added, closed and made into a circle. First, they are dipped in egg white, then in walnuts and placed on the tray. Bake in a 200 degree oven until golden brown. Pour a teaspoon of molasses on top of the cookies while they are still hot. Serve after they have cooled.
