Carrot Cake
Ingredients:
400g carrots
4 eggs
300g sugar
110 ml oil (I use rapeseed oil)
110g room temperature butter
290g wheat flour
1/2 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
Instructions:
1. Preheat oven (180°C).
2. Prepare 400g of carrots, peel the skin, cut any unnecessary parts, steam for 40 minutes, then puree and set aside.
3. In a bowl, sift the wheat flour, salt, baking powder, baking soda and cinnamon.
4. In another bowl, whisk the eggs and sugar. Add oil and butter and whisk until creamy.
5. Add the flour mixture, and combine using a spatula (do not over-mixed)
6. Add the carrot puree to the batter and gently mix until combined (do not over-mixed)
7. Prepare an 8-inch round pan by lining it with parchment paper and applying a layer of grease(You can also use a square oven pan)
8. Pour the batter into the baking pan. Insert a chopstick into the batter and run it gently to remove the excess air.
9. Bake at 180°C for 50 minutes or until the toothpick inserted comes out clean. Please Note: After 20 minutes, cover the cake with parchment paper to avoid over-browning.
9. Remove the cake from the oven and let it cool down for 10 minutes.
10. Decorate the cake with powdered sugar. Serve and enjoy it with coffee or tea.
