Paneer - 400 Gms
Salt - 1 Tsp
Pepper - 1 Tsp
Ginger Garlic Paste - 1 Tsp
Oil - 1 Tsp
Coriander Leaves

Turmeric Powder - 1/4 Tsp
Kashmiri Chilli Powder - 1 Tsp
Cumin Powder - 1 Tsp
Coriander Powder - 1 Tsp

Oil - 1 Tbsp
Ghee - 1 Tbsp
Whole Spices
( Bay Leaf, Cinnamon, Cardamom, Cloves, Cumin Seeds )

Garam Masala - 1/2 Tsp

Method
Cut 400g fresh paneer into large pieces and marinate with 1 tsp salt, 1 tsp pepper, 1 tsp ginger-garlic paste, 1 tsp oil, and chopped coriander. Mix well and rest for 15 mins.
In a pan, heat 2 tsp oil and sauté 3 chopped onions, 6 garlic cloves, 1-inch ginger, and 3 green chilies until golden brown. Add a little salt & coriander leaves and cook for 5 mins. Cool the mixture and blend into a smooth paste with 2 tbsp curd.
Transfer to a bowl, mix in 1 tsp salt, ½ tsp turmeric, 1 tsp Kashmiri chili powder, 1 tsp cumin powder, and 1 tsp coriander powder. Add little water if needed.
Roast the marinated paneer in 2 tbsp oil until golden brown on all sides. Set aside.
In a kadai, heat 1 tbsp oil + 1 tbsp ghee, sauté bay leaf, cinnamon, 2 cardamoms, 2 cloves, ½ tsp cumin. Add the masala paste and cook on low for 10 mins.
Add the roasted paneer, ½ tsp garam masala, crushed kasoori methi, and coriander leaves. Cook covered for 5 mins.
Delicious Afghani Paneer is ready! Serve with roti, naan, or pulao!
