《香烤豬寸骨 + 港式扒房黑椒醬汁》
材料:
豬寸骨
醃料:
蒜粉
洋蔥粉
鹽
紅椒粉
黑胡椒粉
白胡椒粉
油
黑椒醬材料:
乾蔥 - 3粒
蒜頭 - 2粒
黑椒粒 - 2-3湯匙
無鹽牛油 - 20克
茄汁 - 2湯匙
喼汁 - 1湯匙
蠔油 - 1茶匙
鹽 - 適量
水 - 200毫升左右
黃原膠 Xanthan gum - 1/2茶匙左右
做法:
1)豬寸骨和醃料拌勻醃一小時。
2)預熱air fryer 185c;烤豬寸骨12-15分鐘。
3)準備黑椒汁:黑椒粒打磨備用、蒜頭和乾蔥打成蓉。
4)鑊內下牛油加熱煮溶,爆香蒜蓉、乾蔥,下黑椒粉炒香,加入茄汁、喼汁、蠔油,注入水煮開,可下鹽調味,最後加入xanthan gum煮至汁稠。
5)豬寸骨上碟,伴以黑椒醬食用,完成。

Air Fryer Pork Shanks with Peppercorn Sauce HK style
Ingredients:
Pork shank
Marinade:
Garlic powder
Onion powder
Salt
Paprika
Black pepper
White pepper
Oil
Peppercorn sauce:
Shallots - 3nos
Garlic - 2nos
Black peppercorn - 2-3Tbsp
Unsalted butter - 20g
Ketchup - 2Tbsp
Worcestershire sauce - 1Tbsp
Oyster sauce - 1tsp
Salt
Water - 200ml
Xanthan gum - 1/2tsp
Directions:
Marinate the pork shank for at least 1 hour
Preheat air fryer to 185c, then roast the pork shank for 12-15 mins.
Prepare the peppercorn sauce: Grind the black peppercorns, chop the garlic and shallots
Melt butter in a pan, sauté garlic and shallots, add black peppercorn. Add ketchup, Worcestershire sauce, oyster sauce. Pour in the water and season with salt. Add xanthan gum bit by bit and mix well to get the desired consistency
Serve the pork shank hot and with the black peppercorn sauce
