Almond coffee cake. Almond lovers rejoice! This is my tride and true favorite coffee cake base. I put a sugared almond layer in the middle and topped with frangipane. Almond frangipane gets baked for an additional 10 minutes and dusted with powdered sugar 🤌 oh it was delicious. I had some for my family and brought one to work. It was devoured immediately!
Almond Coffee Cake: (10" springform pan, 2x 7"springform pan, 1 9x13" pan)
1/2 cup butter
8 oz cream cheese
1 cup brown sugar
1/2 cup sugar *plus a sprinkle for the middle area*
1/4 cup sliced almonds
2 eggs
1 teaspoon almond extract
1/2 teaspoon vanilla extract
2 teaspoon powder
1 teaspoon cornstarch
1/2 teaspoon salt
1/2 teaspoon buttermilk
Cream together butter, cream cheese, brown sugar, sugar, and almond extract until light / fluffy. Mix in baking powder, cornstarch, salt, and eggs. Then add flour and buttermilk. Split dough in half, add sugar and almonds, then the remaining batter. Bake @ 350°F for 30 minutes.
Frangipane:
1/3 cup sugar
1/2 cup butter
2 eggs
1 1/2 teaspoon almond flour
1 teaspoon almond extract
1/4 teaspoon salt
1/2 cup sliced almonds
Top coffee cake and bake another 10-12 minutes.
