Peel the potatoes and then transfer them to a bowl of water to prevent browning. Once the potatoes are peeled, cut them into thick slices. This will ensure that they hold their shape while cooking and offer a satisfying bite. Heat a pan over medium-high heat. Add mustard oil to the hot pan and let it heat up. Once the mustard oil is heated, add cumin seeds, kalonji seeds, hing and chilli flakes to the pan. Allow these spices to splutter and release their flavours into the oil. Now, add the sliced potatoes to the pan. Season them with salt and turmeric powder. Saute the potatoes on high heat, ensuring they are evenly coated with the spices. After the potatoes are well mixed with the spices, reduce the heat to medium-low. Cover the pan with a lid and let the potatoes cook for 4-5 minutes. This will allow them to soften slightly. When the potatoes are about 50% cooked, add thick slices of onion to the pan. Mix the onions with the potatoes and cover the pan again. Allow the vegetables to cook together until the potatoes are fully cooked and tender. Once the potatoes are cooked through, remove the lid from the pan. Add freshly chopped coriander leaves and amchur powder to the potatoes. Gently mix everything together, ensuring that the spices are evenly distributed. Aloo Ki Katliyan is now ready to serve.
