Today's recipe is a traditional alternative of lemon OR aamchur powder which can be used on dal, shaak, sabzi for adding sour taste. It is called કાચી કેરી નાં આંબોલિયા (આંબોળીયા) - कच्चे आम का आम्बोलिया - Raw Mango Dry Sticks. This is made from raw mango and it can be made with few ingredients within three days.
Here is recipe
Ingredients:
1 KG Raw Mango - Rajapuri Mango is recommended - રાજાપુરી કેરી
3 tbsp salt - મીઠું
1 lemon - લીંબુ
Method:
Wash and clean all mangoes. Peel off all mangoes and cut long slices from mangoes as shown in video. Now collect all mango slices in a big size utensil, add three tbsp salt and a lemon juice. Mix well all ingredients by hands till salt dissolves. Now spread all slices under direct sunlight on a cloth. Cover it with another cloth. After three days, mango slices are found well dried and it becomes so brittle that, it can be broken by little press of fingers.
Our કાચી કેરી નાં આંબોળીયા - कच्चे आम का आम्बोलिया - Raw Mango dry sticks is ready. This can be added in place of lemon OR aamchur powder in our daily cooking for adding sour taste to any recipe. It is stored in air tight jar for whole year for use.
