Anda Bhurji Masala
Preparation time 10 minutes
Cooking time 15 minutes
Serve 2-4
Ingredients
For Ginger Garlic Paste
4-5 no. Garlic cloves, लहसुन
4 no. Green chillies (less spicy & roughly torn) हरी मिर्च
2 inch Ginger, peeled, अदरक
For Anda Bhurji Masala
1 tbsp Ghee, घी
2-3 tbsp Oil, तेल
½ tsp Cumin seeds, जीरा
Prepared Ginger Garlic paste, अदरक लहसुन का पेस्ट
2 large Onions, sliced, प्याज
1 heaped tbsp Coriander powder, धनिया पाउडर
1 heaped tsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
¼ tsp Cumin powder, जीरा पाउडर
Salt to taste, नमक स्वादअनुसार
½ cup fresh Tomato puree, ताज़ा टमाटर की प्यूरी
¼ cup Capsicum, fine chopped, शिमला मिर्च
2 tbsp Butter, cubed, मक्खन
1 tsp Dry fenugreek leaves, crushed, कसूरी मेथी
Little water, पानी
9 no. whole Eggs, अंडे
2-3 tbsp Water, पानी
2-3 tbsp Butter, cubed, मक्खन
2 tbsp fresh Coriander leaves, finely chopped, धनिया पत्ता
For Garnish
Butter, cubed, मक्खन
Lemon wedge, नींबू की फांक
Coriander sprig, धनिया पत्ता
Process
For Ginger Garlic Paste
● In a mortar pestle, add garlic, green chillies, ginger and grind it into a coarse paste.
● Keep it aside for further use.
For Anda Bhurji Masala
● In a shallow kadai or pan, add ghee, oil, once it's hot, add cumin seeds, ginger garlic paste and saute it for a minute.
● Add onions and cook it for a while until translucent.
● Add coriander powder, degi red chili powder, turmeric powder, cumin powder and saute it well.
● Add salt to taste, fresh tomato puree, capsicum, butter, crushed dry fenugreek leaves and cook it for 7-8 minutes on medium flame.
● Add a little water, whole eggs and scramble it well.
● Add water to adjust the consistency, butter and finish it with some fresh coriander leaves..
● Transfer it to a serving dish, garnish it with butter, lemon wedge and coriander sprig.
● Serve hot with ladi pav.
