Puto Calasiao
This steamed rice cake is called the white gold of Calasiao, Pangasinan because it made the locals improve their lives and many of them became successful. The traditional way of making Puto Calasiao is fermented using a clay jar. The original ingredients are rice flour, white sugar and water only. The clay jar has a big factor in making Puto Calasiao because you do not need to add a leaving agent to the batter to make it raise; but not everybody has clay jar at home. So in this video we will do a shortcut by adding baking powder and yeast. And to make it more exciting we will add food colors and flavors.
ingredients:
500g rice flour
1 1/2 cups white sugar(more if preferred)
3 cups water
water roux:
2 cups water + 1/2 cup rice flour
1 1/2 tsp baking powder
1 1/2 tsp instant dry yeast
