Apple Fritters
1 1/2 cups all-purpose flour
1/4 cup granulated sugar
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon cinnamon
1/4 cup cinnamon applesauce
1/3 cup milk
2 eggs
2 apples, peeled, cored, diced
Vegetable Oil, for frying
FOR THE GLAZE:
1/4 cup hot water
2 cups powdered sugar
1 teaspoon vanilla
In a mixing both combine the flour, sugar, baking powder, salt, and cinnamon. Set aside.
In a separate bowl whisk together the applesauce, milk, and eggs. Then add this mixture to the dry ingredients and stir until a smooth batter forms.
Gently fold the diced apples into the batter just until evenly distributed.
Heat the vegetable oil until it reaches 375°. Drop approximately 1/3 cup batter into the hot oil, gently press down and out to flatten slightly, and fry the fritters until golden brown and cooked through. This takes one to two minutes per side. Fry the fritters in batches so that you do not overcrowd the pan.
Once fried, remove the fritters and place them on a cooling rack over a paper towel lined cookie sheet to absorb the excess runoff oil.
Make the glaze by combining the milk, powdered sugar, and vanilla. Stir until the glaze is smooth. Once the fritters, have slightly cooled, brush the glaze over each one.
