Ingredients
For the Dough:
- 2 small eggs
- 3 tablespoons sugar (50g)
- 8g vanilla sugar
- 2 tablespoons butter (40g), softened
- 4 tablespoons oil (40ml)
- 4g baking powder (1 teaspoon)
- 3 large cups flour (300g)
For the Apple Filling:
- 4 apples (500g), peeled and grated I used Granny Smiths
- Juice of ½ lemon
- 3 tablespoons sugar (50g)
- 2 tablespoons butter (40g)
For Assembling:
- 4 tablespoons apricot jam
- 1 egg yolk + 1 tablespoon milk (for egg wash)
- Chopped almonds or peanuts
- Icing sugar (for dusting)
Preheat oven to 180°C (350°F).
Bake for 30-35 minutes or until golden brown.
Pie tin used 10 inch 32 cm loose bottom.
