Ariselu is a famous South Indian Sweet from Andhra Pradesh, Telangana and Odisha., generally prepared during festivals, especially during Sankranthi and Diwali.
Ariselu is made using simple ingredients like jaggery, rice flour, green cardamom, ghee, refined oil and garnished with sesame seeds. It is a perfect awesome sweet for children.
Ingredients :
● Rice Flour : 1 Kg
● Jaggery (Grated) : 800 Gms
● Sesame Seeds : 1/4 Kg
● Ghee : 2-3 Tbsps
● Cardamom Powder : 1/2 Tsp
● Gold Drop Refined Sunflower Oil : For deep frying
Method of Preparation:
● Take 1 kg rice, any variety of rice grains can be used for making Ariselu.
● Wash them thoroughly and soak them for 12 hours
● Then put them in a sieve for 10 minutes to drain off the water
● Further, dry them on a cotton cloth for about 10-15 minutes.
● Then, grind the rice into a fine powder either at home or from a flour mill.
● To prepare the jaggery syrup, take 800 grams of grated jaggery in a thick-bottomed vessel and add 1 glass of water
● Cook it till the jaggery melts completely, stirring it constantly.
● Let the syrup boil till it reaches a sticky consistency.
● Check if the syrup is of the right consistency, pour some water into a plate
● Put a little syrup into the water, and check if it settles at the bottom without melting
● Add 1/4 kg of sesame seeds at this stage and check if the mixture comes together
● Then, add 1/2 a teaspoon of cardamom powder to the syrup to enhance the taste and
flavour.
● Add the rice flour slowly to the syrup on a low flame, while continuously stirring it to avoid lumps and mix well.
● Turn off the flame and add 2-3 tbsps of ghee to the rice flour and jaggery syrup mixture.
Let the dough cool down.
● Heat Gold Drop Refined Sunflower oil in a pan for deep frying the Ariselu.
● Grease your hands with oil, make lemon-sized balls from the dough
● Pat them evenly into small pooris on a sheet of aluminium foil or a plastic sheet.
● Heat the oil, drop the poori in the oil, deep fry it for a minute on medium flame.
● Flip the poori and let it fry on the other side as well till golden brown.
● After frying, place the Ariselu between 2 plates and press it well to extract excess oil
from it.
