Recipe:
Have your oven set to 375 F!
In one bowl, combine:
2 sticks unsalted butter (1 cup total, one stick browned on the stove and one stick room temp)
1 cup packed dark brown sugar
1/4 cup granulated sugar
1 (large) egg
1 1/2 tsp vanilla
1/4 cup maple syrup (pure, not Ms. Butterworth hahaha)
In another bowl, whisk together:
2 1/2 cups all purpose flour
2 tsp pumpkin pie spice (combo of allspice, cinnamon, nutmeg, clove)
1 tsp cinnamon
1/2 tsp baking powder
1/4 tsp baking soda
Sprinkle of salt! (Or about 1/2 tsp)
Then combine both the dry and wet ingredients until all of the dry is incorporated, and add in as many chocolate chips as you like. I went for about 1 cup + a little extra.
It is a good idea to let your dough chill for at least 30 minutes in the fridge! But it’s okay if not. :)
Have extra cinnamon for sprinkling over top the cookies.
(Optional, but sea salt flakes and brown sugar for garnish as well)
Pop your dough onto some parchment paper on a tray (I use a small ice cream scoop) and bake for 12-13 minutes or until you get them juuust barely golden (so they stay nice and chewy)
