Rich Fruit Cake Recipe INGREDIENTS: 8 oz unsalted butter 8 oz sugar 4-5 eggs 1/2 tablespoons cinnamon powder 1 nutmeg grated 1 teaspoon of rose water 2 teaspoons of vanilla 1/2 teaspoons of almond extract 1/4 teaspoons of anise essence (optional) 1 teaspoons of lemon/ lime zest 1 tablespoon of lemon/ lime juice 1 1/2 cups all purpose flour 1 cup breadcrumbs 1 1/2 teaspoons baking powder 1 cup orange juice 2 tablespoons browning 2 cups raisin - soaked 1/2 cup prune - soaked 1/4 cup cherry 1/4 cup mix peel INSTRUCTIONS: • Cream butter and sugar until light and fluffy. • Beat in the eggs one at a time. • Mix in lime/lemon juice and zest. • Combine dry ingredients and set aside. • Blend together the soaked fruits, cherry and mixed peel. • Folding a 1/3 of flour mixture and 1/2 of blended fruit. • Fold in another 1/3 of flour and the remaining fruits. • Combine vanilla, almond extract, aniseed essence and rose water with orange juice then pour in cake batter. • Sift in remaining flour, fold into the cake batter. • Scrape the batter into a greased and lined baking tin 10 inches round cake tin. • Bake in a preheated oven set at 350 degrees F for 1 1/2 hours or until done.
