⬇️⬇️English recipe follows⬇️⬇️ 金銀蛋菠菜苗 材料: 菠菜苗1斤 鹹蛋1隻 皮蛋1隻 蒜頭8粒 處理: 1. 菠菜苗,切去根部,清水浸5分鐘。 2. 蒜頭,去皮,切去頭部硬的部分。 3. 皮蛋,連包裝袋,用菜刀輕手拍一拍,除去殼,洗乾淨,1開8。 4. 鹹蛋,加入少許水分,使其容易除去鹹蛋灰,清水洗乾淨,分開蛋黃及蛋白在2個碗內。 5. 菠菜,已浸好,用清水沖洗1至2次。 烹調: 1. 大火在鑊中燒熱油1湯匙。 2. 加入蒜頭。 3. 加入菠菜,冚蓋,焗2分鐘至軟身。 4. 反一反菠菜,炒一炒,冚蓋煮1分鐘。 5. 菠菜已煮好,夾上碟。蒜頭及菠菜汁仍留在鑊內。 6. 加入鹹蛋黃,慢火煮1分鐘,1開4。 7. 加入皮蛋,1開8,轉大火,加入鹹蛋白至大滾起,放在菠菜上面。 8. 完成,可享用。 Gold and silver egg baby spinach Ingredients: Baby spinach 1 catty Salted egg 1 No. Century egg 1 No. Garlics 8 Nos.
