A walk through how to make this delicious Bacon Wrapped, Stuffed Pork Tenderloin in the Ninja Foodi grill! Now, you can also cook this in any of the other Ninja appliances providing you’re able to fit it, and cook time may need to be adjusted. This was a basic store bought Pork Tenderloin, butterfly cut, stuffed, rolled and wrapped in a bacon lattice and roasted to perfection! Feel free to use whatever veggies/cheese you like, I've also made this with spinach & tomato and its amazing! So get creative! I have included a “how to” video to make your own bacon lattice (or weave). I used a pre seasoned Pork Tenderloin, or you can season one to your preference.
- 1 Pork tenderloin
- 1 yellow onion (chopped)
- 8 oz package sliced white mushrooms (cleaned)
- shredded mozzarella cheese (or desired cheese) *optional
- 2 cloves minced garlic
- 14 slices of bacon (thick cut works best)
- 1 1/2 tsp olive oil
*You may also need Plastic wrap, Aluminum foil, and butchers twine or toothpicks*
//INSTRUCTIONS//
-Start by making your bacon lattice using 14 total pieces of bacon. Pull out a large piece of aluminum foil (enough to exceed the size of your bacon by about 3 inches on each side -across) lay 7 strips of bacon across, down the foil. Peal back (halfway) every other piece. Take a strip of bacon and lay vertically starting from the middle where your folds start. Place back down the pealed bacon and repeat process with every other and you will start to notice a pattern, repeat until all the bacon has been used and "square' is complete. *See video for reference* Leave on foil and refrigerate until ready to use.
-Take pork tenderloin and butterfly cut, careful not to cut all the way through. Open, place plastic wrap over it and using a meat tenderizer pound out any thick parts, expanding meat to the same thickness throughout.
Next, Sear/Saute' HI in Foodi or on stove the mushrooms & onions (or your desired vegetables) until tender/translucent, add in the garlic and saute' another 30-40 seconds. Remove from heat, set aside.
-Spread your cooked veggies across the pork leaving about 1/2 inch from the edge. Sprinkle desired amount of cheese across top, and try to "flatten" all the filling across the meat so there's no "lumps"(Easier to roll that way). Start on one end and begin to roll while slightly stretching the pork. Once you rolled completely, with the "seam" on the bottom, carefully pick it up and place diagonally onto your bacon lattice square. Take the corner of bacon (closest to you) and wrap around the tenderloin, roll as you go, tuck/stick in the sides (similar to that of wrapping an egg roll or burrito) and continue to roll. Next you can either wrap with butchers twine or use toothpicks to hold seams together during cooking. The aluminum foil will help keep it together but once removed from the foil its an added security from coming undone but completely optional. Center tenderloin on foil, fold in sides and close foil. Set the tenderloin in the Ninja Grill base pot, I did this diagonally but if it fits lengthwise you can do that. Pre heat the Foodi grill 375° for 40 minutes, after preheat, add food. ***If you don't want to use foil, you can add the tenderloin into the air crisp basket (if it will fit) to drain bacon grease during cooking, but the bacon may overcook before the tenderloin is done, that is why I use the foil, but still completely up to you.*** a)If cooking tenderloin by itself, when you have about 16 minutes remaining, open foil and allow to cook the rest of the way with foil opened. Once its done (please take temp, s/b 145°) you will need to remove foil, discard grease, and flip the tenderloin with bottom side now facing up to then Air Crisp (uncovered) on 400° for 6-7 minutes. This came out perfect for me!
b)If adding roasted potatoes and asparagus, Add tenderloin after preheat, after about 6-7 minutes add your seasoned/oiled potatoes on both sides of tenderloin. Allow potatoes to cook with the tenderloin, I did toss a couple times throughout. When there's 16 minutes remaining, open/or remove foil so that bacon cooks. Resume cooking, when 7 minutes remaining I added in my asparagus and cooked to the end. *Please take temp for pork doneness. Remove potatoes and asparagus, flip the tenderloin so the bottom is now face up, Air Fry on 400° for 6-7 minutes. Let stand 2-3 minutes, remove, platter up and Serve! ~Enjoy!
