Pot Chicken Biryani
Ingredients:-
Chicken - 1kg
Basmati Rice - 600g (soaked)
Ginger garlic paste- 1 tb spn
Chilli powder - 1 tb spn
Coriander powder- 2 tsp
Cumin - 1 tsp
Garam masala - 1 tsp
Brown onions- 1 cup
Curd - 1 cup
Lemon Juice - 1
Mint Leaves- 1 bunch
Coriander leaves- 1 bunch
Onion Fried Oil - 50g
Rose essence- few drops
Kewra essence- few drops
Saffron water - 1 tsp
Water - As Required
Salt - To Taste
Dough- to seal the pot
Method:-
Marinate chicken with chilli powder, ginger garlic paste, coriander powder, cumin powder, garam masala, mint leaves, fried onion, oil,coriander leaves, curd, lemon , salt, brown onions and mix it well and refrigerate for 3 hours.
Take a Handi & layer the chicken in it as shown.
In boiling water add salt, whole garam masala, oil and soaked basmati rice. Mix it once and cook it till 75% is done.
Take a ladle full of this rice water and add it to chicken handi,
Now strain the rice and layer it in the pot. Add rose essence, kewra, saffron water, fried onions, mint & coriander and seal the pot with dough.
Cook it for 30 minutes and rest it for 5 minutes.
Serve it with Raita
