Baghala Ghatogh (باقلا قاتق) or Baghali Ghatogh (باقالی قاتق), is a very well known Persian dish that hails from the northern part of Iran, specifically the provinces of Gilan and Mazandaran. The dish is normally made with Pach Baghala, a type of Persian bean; however, other types of beans such as lima beans, fava beans, and pinto beans may be used. In my version of Baghala Ghatogh, red kidney beans are used. Enjoy! Ingredients 1 cup Red Kidney Beans, dry. Soaked overnight and peeled. 6 Garlic cloves, diced 1/3 cup Dill, dried, finely chopped 1 tsp Turmeric 1/2 tsp Salt (to taste) 1/2 tsp Black Pepper (to taste) 3 Eggs 1 Tbsp Butter 4 Tbsp Olive oil Notes - Served with Persian rice (Kateh) or Persian flat bread (e.g. Lavash, Barbari, etc.) - Common side dishes: Sliced Cucumbers, Persian Torshi (pickled vegetables & herbs), Zeytoon Parvardeh (marinated Persian olive & pomegranate dip). -------------------------------------------------------------------------------------------------------------------------- Thank you very much for watching my cooking video!
