POTATO BREAD | BAHAMIAN COOKING

Ingredients
4 medium size Sweet Potatoes (purple skin - about 4 cups)
1 egg
1 cup flour (more flour make the bread firm)
sugar (1/2 to 1 cup)
coconut grated (as much as you want)
1/2 teaspoon nutmeg
2 tablespoons vanilla extract
1/2 tin evaporated milk
1/2 stick unsalted butter
1/2 teaspoon salt
Bake on the top rack at 350 degrees for about 35 to 45 minutes or until the sides of the bread separate from the baking dish/pan.
