薑蔥蒜焗鯇魚
材料：
鯇魚腩一個
薑一舊
蒜頭6粒
乾蔥頭4個
芫荽適量
處理：
1. 鯇魚腩，清水洗乾淨，擎乾水。
2. 薑，去皮，洗乾淨。
3. 乾蔥頭，去皮，洗乾淨。
4. 蒜頭，去皮。
5. 芫荽，切段，洗乾淨。
6. 薑，切細粒，拍鬆。
7. 魚腩，廚紙索乾。
8. 魚腩，加入調味料：
a. 鹽少許
b. 生抽半湯匙
c. 糖半茶匙
d. 胡椒粉適量
e. 生粉一茶匙
f. 油一茶匙
撈勻，加入米酒一茶匙，撈勻。
烹調：
1. 大火在鑊內燒熱油一湯匙。
2. 轉中慢火。
3. 爆香薑、蒜及乾蔥頭。
4. 加入芫荽頭及魚腩放上面，連同醬汁。
5. 加入米酒一湯匙，大火滾起，轉中火，冚蓋焗5分鐘。
6. 灑上芫荽。
7. 完成，上碟，可享用。

Ingredients:
Grass carp belly 1 No.
Ginger 1 No.
Garlics 6 Nos.
Shallots 4 Nos.
Coriander appropriate amount
Preparation:
1. The belly, rinse thoroughly. Drain.
2. Ginger, get it peeled. Rinse with tap water.
3. Shallots, get them peeled. Rinse with tap water.
4. Garlics, get them peeled.
5. Coriander, cut in lengths. Rinse with tap water.
6. Ginger, dice in small cubes. Beat well.
7. Grass carp belly, dry with kitchen towels.
8. The belly, add seasoning:
a. Salt little
b. Light soya sauce 0.5 tbsp
c. Sugar 0.5 tsp
d. Pepper appropriate amount
e. Tapioca starch 1 tsp
f. Oil 1 tsp
Mix well. Add in 1 tsp of rice wine. Mix well.
Steps:
1. Heat up 1 tbsp of oil at high flame in wok.
2. Turn to medium-low flame.
3. Fry ginger, garlics and shallots well.
4. Add in coriander root and put the belly on top, as well as the sauce.
5. Add in 1 tbsp of rice wine. Heat up at high flame. Turn to medium flame. Cover up the wok and braise for 5 minutes.
6. Put coriander on top.
7. Complete. Put on plate. Serve.
