Ingredients:
For the Chicken Skewers:
- 1 ½ lbs (680g) boneless, skinless chicken breast or thighs, cut into 1-inch cubes
- 2 tbsp olive oil
- 1 tbsp light soy sauce
- 1 tbsp honey
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp ground ginger (adds a subtle warmth)
- ½ tsp onion powder (enhances umami)
- Wooden skewers (soaked in water for 30 minutes)
For the Bang Bang Sauce:
- ½ cup mayonnaise
- 2 tbsp sweet chilli sauce
- 1 tbsp Sriracha (adjust to taste)
- 1 tbsp honey
- 1 tsp lime juice
- 1 small clove of garlic, finely minced or grated (Optional)
- 1 tsp rice vinegar (balances sweetness) I used apple cider vinegar
For Garnish (Optional):
- Chopped green onions
- Toasted sesame seeds
- Crushed peanuts (adds a bit of crunch)
- Extra lime wedges for squeezing
Oven grill - 180c - 12 mins
